Embarking on a culinary journey through global cuisines has been one of the most enriching experiences of my life, opening my eyes—and palate—to a world of diverse flavors, textures, and traditions. In addition to these international gems, I’ve also enjoyed discovering Ethiopian cuisine at Mesob in Washington, D.C. Sharing a large platter of injera, a sourdough flatbread, topped with various stews and vegetables, was a communal and joyous experience. Eating with my hands and savoring the bold spices and unique textures made this meal a delightful exploration of flavors.
